Most of my breakfasts consist of fruit and nuts: arranged, blended, or simply eaten in their natural forms. Perhaps that is a boring thing to admit on a food blog, but truly, I wake up in Chipmunk Mode almost every morning.
Lately, a zesty açai bowl is my favorite way to start the day.
Packed with protein- and mineral-rich seeds, nuts, and nut butter, VLGL açai bowls are energy-sustaining yet light enough to be eaten before a morning yoga class.
My go-to ingredients include (but are not limited to): mint from my little Fern Gully yard, sliced carambola (starfruit), raw ginger root, and fresh-squeezed lime juice. Oh, and of course, a little treasure trove of extra nut butter and sliced nuts at the bottom of the bowl (Chipmunk Mode...).
As long as your bowl is built of fruits with a low glycemic load and no-sugar-added açai powder, açai bowls are a bright way to nourish your day.
